I make this every Christmas, it's delicious and slightly sweet. You don't even need to measure out any amounts of anything!

Parboil as many parsnips as you want, then mash them. Mix with hot water, beating with an eggwhisk to keep it nice and runny. You can add a pinch of salt here if you wish, but I find it's fine without.
Add some finely chopped raw parsnips and simmer until they're soft.

This is the sort of soup recipe I love - simple, good for you and tastes fantastic.

I really want to make this and I dont want to sound stupid but how does one parboil?

To parboil you cook something partially by placing it in boiling water and removing it before it fully cooks.
