Ingredients

Roasted chestnuts - 400g
Onions - 100g
Garlic - 1 clove
Chicken stock - 250ml
Semi-Skimmed milk - 250ml
Double Cream - 250ml
Olive oil - 10ml

Optional:

Crisped parsnips for garnish

Directions

*Top the chestnuts and roast in the oven for 20 mins.
*Peel chestnut, removing the hairy inner layer.
*Peel and finely chop onion and garlic.
*Heat the olive oil and sweat off the onions and garlic, then add the roasted chestnuts, chicken stock and milk and bring to the boil.
*Remove from heat and liquidise until smooth.
*Pour back into saucepan, add the double cream, and season.

How festive Smiler... I'm going to try it sometime this week.
